For example, the booklet said to cook a 12-pound turkey at 375 for 3.5 hours. It was done an hour early, and bordering on being overdone at that. Everyone should become familiar with his or her own oven's cooking times. That 12-pound bird would have been better at 350 for 2.45 hours, or 375 for 2 hours. Make sure you have a test run or two before you rely on it for something like a major holiday, and write corrections in its cookbook to help you or others remember the temperatures and times you really need. Once you do that, I don't foresee any major problems. The metal cased unit also gets quite hot and you or little kids can be burned if proper care isn't... We use it mainly to make large batches of bone broths and stocks. I used to make the stock on my gas stove but I feel a lot more comfortable leaving this on for 48 hours and it makes a great deal more stock than even my biggest stock pot. The temperature is also much more controllable than my gas burner, which would always cause me to burn out of water. The only complaint that I have is that the so called enamel coated steel insert feels awful flimsy to be steel and the finish is pretty hard to clean. I would of preferred a ceramic insert like crock pots have - despite the added weight that would of incurred. |
